For the past few days... I have had this sudden cravings for Coconut Candy. I don't know how nor why but it just popped into my head and stayed there. Memories of me in my mom's kitchen when I was a little devil crept in. My mom used to make me do the stirring and it was no easy task for a little devil of 9 or 10. But I did it nevertheless. It was really tiring for my nimble arms but I managed. Maybe that's where my culinary interests came from. I spent a lot of time in my mom's kitchen watching and asking questions and helping her. I can still remember the ingredients... carefully grated coconut (ensuring the shell was not grated as well), sugar, condensed milk, a little bit of salt, vanilla essence and colouring. It's been a few days and I still have the craving. I managed to look the recipe up on the net so I think I'll try making it this weekend. I could have just asked my mom for the recipe but I didn't want her to go digging into her drawers looking for her recipe book.
I can already imagine the taste... so yummy... rich, sweet... but so, so, sinfully fattening... Stay tuned for the results... photos and tested recipe.
